
Steaks with Chilli Butter
Serves: 2 Prep Time: 5 minutes Cook Time: 12 minutes
Simple supper for two, peppered sirloin, rump or rib eye steaks with chilli butter.
Ingredients
- 2 lean sirloin, rump or rib-eye steaks
- 5ml/1tsp black peppercorns, crushed
- 1.25ml/½tsp chilli puree or 1cm/½inch piece red chilli, deseeded and finely chopped
- For the Chilli Butter:
- 50g/2oz butter, softened
- 2.5ml/½tsp chilli puree or 1cm/½inch piece red chilli, deseeded and finely chopped
Cooking Times
Based on a 2cm/¾inch thick steak
Rare
2½ minutes on each side Medium
4 minutes on each side Well done

- In a small bowl mix together the butter with the chilli puree or fresh chilli. Form the butter into a sausage shape and wrap in cling film or foil and refrigerate until required.
- Place the crushed peppercorns on a large plate and coat the steaks on both sides.
- Heat the oil in a large griddle or frying pan and cook as preferred.
- Top with a disc of chilli butter and serve immediately with a crisp green salad, sweet potato wedges or thinly cut roasted parsnips.
