Lamb Chapli Kebabs: A Flavourful Fusion Delight

Ingredients

  • 500g lamb mince (with 20% fat content)
  • 1 medium onion, finely diced and excess moisture squeezed out
  • 1 medium tomato, deseeded and finely diced
  • 1 green chilli, finely diced  
  • 1 ¼ tsp coriander powder
  • 1 tsp cumin powder
  • 7.5g salt 
  • 1½ tsp chilli flakes
  • ½ tsp garam masala
  • 1½ tbsp gram flour/besan or plain flour

Method

  1. Start by ensuring that the diced onions have had their excess moisture removed as moisture can interfere with the kebab's texture. 
  2. In a mixing bowl, combine the lamb mince, onions, tomatoes and fresh chillies.  
  3. Add all the spices and the gram or plain flour to the mixture. 
  4. Mix thoroughly until the ingredients are well combined and the mixture becomes sticky, clinging to your hands. 
  5. Divide the mixture into six equal portions and shape each into a patty. As an optional addition, you can insert a slice of tomato into each kebab. 
  6. Heat a neutral oil, such as sunflower oil, in a pan over medium heat. Shallow fry the kebabs for approximately 10 minutes, flipping halfway through. This ensures the lamb is thoroughly cooked and develops a delightful crust. 
  7. Alternatively, if you prefer other cooking methods, you can opt to grill the kebabs under high heat or use an air fryer.  
  8. If air-frying, brush or spray the patties with oil, then air fry at 180°C  for 8 minutes. 
  9. If grilling, grill on the highest setting for 8 minutes, flipping midway.
