

Beef Chow Mein

Ingredients
For the Chow Mein:
- 4 thin cut beef sirloin steaks (155g each), trimmed of fat and cut into thin strips
- 2 tablespoons sesame, rapeseed or vegetable oil
- 2 tablespoons garlic and ginger purée or paste
- 2 x 320g packs ready to cook stir-fry vegetables of your choice
- 2 teaspoons Chinese 5 spice powder
- 4 tablespoons dark soy sauce
- 2 tablespoons light soy sauce
- 2 x 300g packs straight to wok or ready to wok noodles
To garnish:
- 2 spring onions, finely chopped
To serve:
- Prawn crackers
- Fortune cookies
Method
- Heat 1 tablespoon oil in a large wok or non-stick frying pan over high heat until hot. Add the beef with the garlic and ginger purée. Stir-fry for 1-2 minutes. If required, spoon off any excess meat juices from the pan, set aside and reserve.
- Heat the remaining oil until hot and add the vegetables. Stir-fry for 2-3 minutes, tossing the vegetables continuously. Add the Chinese 5 spice and both soy sauces to the pan with the noodles and any reserved meat juices.
- Gently stir-fry for 1-2 minutes until the noodles are hot and cooked through.
- Garnish with the spring onions and serve with your favourite sides.
