Ingredients
- 300g lean beef strips (sirloin or flank steak), trimmed of fat
- 2 tablespoons cornflour
- ¼ teaspoon bicarbonate of soda
- 3 sprays olive oil cooking spray
- 2 teaspoons low-sodium soy sauce
- 2 garlic cloves, peeled and grated
- 1 teaspoon runny honey, for a touch of sweetness, optional
- 2 tablespoons tomato ketchup
- 2 sweet peppers (red and green), deseeded and finely sliced
- 1 medium carrot, peeled and cut into fine julienne strips
- 2 spring onions, finely chopped
To garnish:
- Small handful finely chopped fresh red chillies and extra finely chopped spring onions
To serve:
- 125g wholegrain rice or wholegrain basmati rice, cooked
Method
- Put the cornflour and bicarbonate of soda in a large bowl, add the beef strips and gently toss together until evenly coated. This gives the beef a nice crispy texture in the air fryer.
- Preheat the air fryer to 200°C for a few minutes. Transfer the beef to the air fryer in a single layer and lightly spray the beef with two sprays of the olive oil cooking spray.
- Air fry for 6-8 minutes, shaking halfway through, until the beef strips are crispy and brown. Remove from the air fryer onto a plate and set aside. Reduce the air fryer temperature to 180°C.
- Place the peppers, carrot, and spring onions in the air fryer, add one spray of the olive oil cooking spray, toss gently and cook at 180°C for 4-5 minutes, until slightly the vegetables are slightly soft.
- Whilst the vegetables are cooking in the air fryer, in a small bowl, mix together the soy sauce, garlic and tomato ketchup. Add honey if you prefer a slightly sweeter sauce.
- Add the beef to the vegetables in the air fryer. Drizzle over the sauce, toss together and air fry at 180°C for a further 2 minutes.
- Garnish with the red chillies and extra spring onions, if desired and enjoy your chilli beef with cooked plain wholegrain rice or wholegrain basmati rice as part of stir-fry bowl!
