Roast Top Rump of Beef with Crispy Lemon Potatoes and Roast Vegetables

Ingredients

  • 900g-1kg lean boneless beef top rump joint or topside beef joint
  • 2 tablespoons rapeseed oil
  • 1 teaspoon garlic powder or 3 garlic cloves, peeled and crushed
  • 1 tablespoon dried herbs of your choice e.g. mixed herbs, thyme, oregano
  • Salt and pepper, to season
  • Spray oil
  • For the crispy lemon potatoes:

  • 6-8 large floury potatoes e.g. Maris Piper, peeled and cut into 1 cm thick rounds and chunks
  • 1 tablespoon rapeseed oil
  • 1 teaspoon garlic powder, or 2 garlic cloves, peeled and crushed
  • Zest of 1 lemon
  • Salt and pepper, to season
  • For the roast vegetables:

  • 6 medium-sized carrots, peeled and cut on the diagonal
  • 3 red onions, peeled and quartered
  • 1 tablespoon rapeseed oil
  • Salt and pepper, to season

Method

  1. Remove the beef from the fridge at least an hour before cooking to bring up to room temperature. Pat dry with absorbent kitchen paper.   
  2. Preheat the air fryer to 200°C for 5 minutes. In a small bowl mix together the rapeseed oil, garlic powder or freshly crushed garlic, dried herbs, salt and pepper.  
  3. Brush the mix all over the joint. Spray the air fryer trivet with a little oil and position the beef on top of the trivet.  Cook in the air fryer for 15 minutes at 200°C before turning the temperature down to 180°C and cook for a further 15-20 minutes for medium. 
  4. Remove the beef from the air fryer, wrap carefully with foil and rest for 10 minutes. Transfer any meat juices from the foil into a bowl.
  5. Slice the beef thinly, spoon over any reserved meat juices and serve with your favourite sides.  

For the crispy lemon potatoes: 

  1. Parboil the sliced potatoes for 6-7 minutes.  Drain and allow to steam.  
  2. Place in a bowl with the oil, garlic, lemon zest, a good pinch of salt and pepper.  
  3. Cook in a preheated air fryer or preheated oven at 200°C for 25 minutes, shaking the basket or tray from time to time, until the potatoes are tender in the middle and golden crispy on the outside.  

 For the roasted vegetables: 

  1. Toss the carrots and onions in a little oil, season with salt and pepper.
  2. Cook in a preheated air fryer or oven at 200°C for 25 minutes, until cooked through and caramelised.  

 

Tips:

Use up any leftover roast beef in a variety of delicious recipe options such as sandwiches, salads, pies, enchilladas, chillies, sliders, soups or pasta dishes. Air fryers do vary so adjust the cooking time according to your appliance handbook.
