
Thai-Style Beef Bowl
Fresh Thai flavours meet lean beef mince to create this sweet-savoury Thai-style beef bowl!

Ingredients
- 100g lean beef mince (5% fat)
- ½ teaspoon rapeseed oil
- ½ teaspoon garlic powder
- ½ teaspoon ground coriander
- 1 fresh lime
- 60g dried brown rice noodles
- 1 tablespoon sweet chilli sauce
- 30g red cabbage, finely shredded
- 1 small carrot, peeled and julienned
- 1 spring onion, finely sliced
- 10 unsalted peanuts, crushed or finely chopped, to garnish
- 1 teaspoon finely chopped fresh coriander, to garnish, optional
Method
- Heat the oil in a non-stick frying pan over moderate heat for 1-2 minutes before adding the mince, garlic powder and ground coriander. Stir-fry for around 4-5 minutes until the mince is brown and cooked through. Add the juice of ½ a lime, stir gently and keep warm whilst you build your bowl.
- Cook the rice noodles according to the packet instructions, drain, reserving 2 tablespoons of the noodle cooking water. Remove from the heat, return the noodles to the cooking pan and add the sweet chilli sauce and the reserved cooking water. Gently stir until well coated.
- Build your bowl with the noodles, fresh vegetables (cabbage, carrots and spring onions) and the cooked mince. Toss gently.
- Garnish with the peanuts, fresh coriander, if used and a squeeze of a fresh lime quarter.
