Ingredients
- 100g lean beef thin cut or minute steak, trimmed of fat
- 140g mixed grains or pulses e.g. Spanish style mixed grains and rice
- 50g grated carrot
- 50g cherry tomatoes, quartered
- 50g sweet pepper, deseeded and cut into small chunks
- 25g baby spinach leaves
- 45g Feta cheese, crumbled
- Lemon wedge, to garnish
Method
- Cook the grains according to the packet instructions and arrange in a serving bowl.
- Add the carrot, tomatoes, peppers and spinach leaves. Preheat the grill to moderate.
- Season the steak and cook for 1-2 minutes on each side. Slice thinly and arrange on top of the vegetables.
- Sprinkle over the Feta and serve with a lemon wedge.
