Ingredients

  • 100g lean beef thin cut or minute steak, trimmed of fat
  • 140g mixed grains or pulses e.g. Spanish style mixed grains and rice
  • 50g grated carrot
  • 50g cherry tomatoes, quartered
  • 50g sweet pepper, deseeded and cut into small chunks
  • 25g baby spinach leaves
  • 45g Feta cheese, crumbled
  • Lemon wedge, to garnish

Method

  1. Cook the grains according to the packet instructions and arrange in a serving bowl. 
  2. Add the  carrot, tomatoes, peppers and spinach leaves. Preheat the grill to moderate.
  3. Season the steak and cook for 1-2 minutes on each side. Slice thinly and arrange on top of the vegetables. 
  4. Sprinkle over the Feta and serve with a lemon wedge.
