

Mexican-Style Beef and Hot Honey Pizza

Ingredients
For the meatballs:
- 500g beef mince (15% fat)
- 2 tablespoons chipotle chilli powder or paste
- 1-2 teaspoons garlic powder or 1 large garlic clove, minced
- 2 teaspoons ground coriander
- 1 teaspoon salt
- 1 teaspoon oil
For the pizza:
- 4 x flame-based prepared pizza bases
- 4 tablespoons ready-made pizza sauce
- 1 red or yellow pepper, deseeded and sliced
- 3 tablespoons canned sweetcorn (or defrosted, if frozen)
- 1 small red onion, peeled and finely sliced
- 250g grated mozzarella and Cheddar cheese mix
- Hot honey, to drizzle
To serve, optional sides:
- Tomato salsa
- Soured cream
- Mozzarella sticks
Method
- To prepare the meatballs, place all the ingredients except the oil into a large bowl and mix well.
- With slightly damp hands, divide the mixture into 4 equal-sized balls and shape each ball into 20 small meatballs.
- Heat the oil in a large non-stick frying pan over medium heat until hot. Cook the meatballs in batches for 6-8 minutes, until golden brown, shaking the pan from time to time. Alternatively, cook the meatballs in batches in a preheated air-fryer at 180ºC for 5-7 minutes, shaking the basket from time to time. Transfer the meatballs onto a large plate.
- Preheat the oven to 220º, 200ºC Fan, Gas Mark 7.
- Meanwhile, to assemble the pizzas, put the pizza bases onto a large chopping board, Spread 1 tablespoon of the pizza sauce over the base of each pizza and add a quarter of the cheese and your favourite toppings. Arrange the meatballs evenly over each pizza base then sprinkle over the remaining cheese.
- Cook the pizza for 10-12 minutes or until the base is cooked and the cheese has melted.
- Drizzle over the hot honey and serve with the optional sides.
